Vegan Stir-fry

Let's broc-n-roll!

SIMPLE. CLEAN. VEGAN.


Ingredients:

- Soba noodles

- Broccoli

- Red and green bell pepper

- Edamame

- Mushroom

- Snap peas (optional)

- LOW sodium soy sauce

- LOW sodium teriyaki sauce

- Sesame seed oil

- Garlic


Directions:

1. Heat skillet over medium heat with 2-3 tbsp of sesame oil (coating the bottom of the pan), add in chopped onion. Cook till translucent.

2. Add in chopped mushroom, and bell pepper, sauté until completly softened.

3. In a seperate pot, cook soba noodles as directed.

4. Add edamame and broccoli to pan with vegetables and add about 1/4 cup teriyaki suace and 1-2 tbsp of soy sauce (depending on if you like soy sauce). Garnish vegetables with black pepper and garlic.

5. COOK vegetables over medium heat for 10-15 minutes.

6. Once noodles are cooked, add them right to pan (OUT OF POT). Using a pasta ladle, to drain some of the water.

7. MIX noddles with stirfry and WAHLA!


SO delicious and wonderful for leftovers.
