Whats that? You don't like puns? My APOLLO-GEES!
This recipe is recreated from a HELLO FRESH meal we ordered a couple months back. Some (beauty)food pairings that we are obsessed with.
Ingredients:
Organic pita pockets or pita rounds
Cucumber
Tomatoes
Baked sweet potato fries
Shredded lettuce
Grilled or baked organic* chicken
Fresh dill
Tzatziki Sauce (we buy wegmans dipping sauce)
*working on creating a dairy free alternative)
Pine nuts
Directions:
This one is super easy...
-Grill or bake chicken as you normally would. We make a simple chicken that is garnished with ONLY: olive oil, pink salt, pepper and lemon juice. Set aside.
-Baked sweet potato fries. Rinse and chop one or two sweet potatoes, garnish with salt, pepper, harissa and za'atar seasonings. Bake in oven as you would normally bake a potato and wait until golden brown or extra crispy.
-Apply a thin layer of tzatzki sauce onto or into pita pocket/round. Add all your toppings: cucumber, lettuce, tomatoes, chicken, sweet potatoes and lettuce. Garnish with fresh dill and pine nuts for a crunch.
I always top this meal with extra harissa! Be careful you don't add too much!
