You butternut SQUASH my heart...
This recipe is PERFECT for breakfast or brunch. Full of color and nutrients!
Serves 1
Ingredients:
2 organic eggs
6 asparagus spears
2 bunches of tuscan kale
Handful of bell pepper slices
1 Tomato sliced
1/4 cup of spaghetti squash
Trader Joe's "Everything but the bagel" seasoning
Basil
Crushed red pepper
olive oil
Cheese topping: freshly grated parmesan off the brick OR goat cheese
Recipe:
On medium heat sauté all vegetables with 2 tbsp olive oil. Add a dash of Trader Joe's seasoning. Cook together for about 5-10 minutes. Once everything is cooked, add in two whole eggs (I always use organic), let sit in pan for a minute or so BEFORE breaking them. Mix everything together in pan and add in extra seasonings (Everything but the bagel and crushed red pepper). On the side, prepare you dish with 3 slices of fresh tomato. The tomato will serve as the base of your plate. Top tomato with basil. Top tomato slices with your egg hash and top with grated parmesan OR goat cheese. Either or is delicious.
*I don't label my self dairy free; a little bit here and there is not a problem for my tummy! I tend to stick to just parmesan off the brick or goat cheese when needed/wanted*
This meal is seriously so delicious and filling. Would be GREAT served as a casserole bake!! Which I will be making this weekend and posting...so stay tuned, xo
