Jambalaya

Italians take on CAJUN food...

Ingredients:

1 Organic Turkey Sausage

About 10-12 Wild Caught Shrimp

1-2 Bell Pepper (green and red)

1 Small Onion

1 to 1 1/2 cups Brown Rice

1 can Diced Tomatoes (not salted)

2 Garlic Cloves

2tbsp EVOO

Cajun Seasoning (low sodium)

2 cups Vegetable or Chicken Broth


Directions:

On low heat add 2 tbsp EVOO into pot. While heating up, chop garlic, onion and bell pepper. Add to olive oil. Garnish vegetables with salt and black pepper. Satue togeter for about 5-10 minutes. While that is cooking, heat up 2 more tbsp of olive oil on a seperate skillet on medium heat. Add chopped sausage to skillet and let it sizzle....(we buy already cooked sausage so we just throw it on stove top to CRISP up)! Usually let it get real crispy, about 5-10 minutes. Once the sausage is cooked, throw into pot with vegetables. Now you will cook the shrimp (or heat shrimp if you buy them already cooked ). Cook as directed. Again, throw shrimp in to vegetable pot. MIX vegetables and proteins together. Garnish with 4 tbsp cajun seasoning. Mix again. Add in vegetable or chicken broth. Add in brown rice. Mix once more. Bring pot to a boil, then turn down to a simmer and cover with tight lid. Let sit for 20 minutes (or until rice is fully cooked and has asorbed all broth). We tend to be a little heavy handed when it comes to seasoning. So once the jambalaya is ready to go we add about two more tbsp of the cajun seasoning.


To add a little more GREEN to this meal, we add about two cups of spinach and let it wilt into the jambalaya.


This recipe will last you a day or 2 of leftovers! Great to serve as a main dish or side.


*Option to add chicken to meal as well *

* I add a dash of cayenne pepper to my dish once its plated for more heat *
