Summer style dinner anytime of the year...
For the zucchini salad:
- Zucchini
- Celery
- Cherry Tomatoes
- Basil
- Chickpeas
- Lemon Juice
- White balsmic Vinegar
Directions:
Spiralize 1-2 zucchini, depending on how much you need to make and how big the zucchini is. Chop Zucchini (once spiraled). Squeeze half a lemon on top with about 2 tbsp olive oil. TOSS. Add chopped celery, cherry tomatoes, basil and chickpeas to bowl. TOSS once more and SPLASH with WBV.
Chicken:
We use to grill a couple chicken breasts to use throughout the week with different meals. Currently I'm mostly* vegetarian, so I would replace the meat with grilled portobello or tofu.
We keep it simple, garnishing the chicken/portobellos with lemon, sea salt and black pepper. MOST of the time we add cayenee pepper for heat.
WE LOVE A GOOD AMOUNT OF HEAT ADDED TO ANY DISH!
To plate:
Place chicken/portobello on top of raw arugula and zucchini salad! Tastes like summer.
