Greek Zucchini Boats

What does a vegetable wear to the beach? A Zucchini!

We eat zucchini a whole lot in this house. It's healthy, affordable and you can do A LOT with it.


For the boats:

Turn oven on 350 degrees.

Zucchini's will need to be sliced down the middle. Scoop the inside out with a small* spoon gently (or you will break the zuc). Place the inside scraps in a seperate bowl. Place zucchini's halfs on baking dish and set aside.

In a skillet on medium heat, sautee chopped onion until translucent. Season with salt, pepper. Add 2 chopped garlic cloves and the zucchini scraps. Sautee together for an additional 5 minutes. Add in ground organic chicken or turkey and cook throughly. Add cayenne for heat, lemon juice for acidity and oregano. Add in 1 tbsp of dijon mustard for taste. Cook all ingredients together, another 10-15 minutes. Once meat is prepared, place inside each zucchini boat. Drizzle all zucchini boats with extra olive oil. Place in oven for 25-30 minutes.

When they are done, sprinkle feta on top with crushed red pepper and parsley!

*Optional add-ins: black beans, avocado, kalamata olives, black, olives, roasted red pepper, chopped tomato and/or quinoa,

*VEGAN OPTION: If you want to go meatless, replace the meat with porotbello and defintely add in black beans, avocado, and quinoa for healthy plant-based proteins and fats!
