Baked Potato Smash with Garlic, Avocado Aioli

Your party guests will thank you.

Ingredients:

Potatoes:

-10-15 yellow baby potatoes

- 2 tbsp olive oil

- 3 garlic cloves

- Fresh thyme

- Sea salt and ground black pepper for taste

Aioli:

- 1 whole avocado

- 1 1/2 cups vegan (dairy FREE) mayonese (my favorite brand is Sr. Kensington)

- Black pepper

*It's so delicious. Made with Chickpeas and seasoned with garlic and lemon*


Directions:


1. Prehead oven to 450 degrees

2. Bring a pot of water to a boil

3. After washing* all potatoes, place in boiling water

4. Boil unti soft (able to easily stab with a fork)

5. Dry potatoes* (must be fully dry)

6. Place potatoes onto a prepared baking sheet

7. Using the bottom of a mason jar (or a potato masher), carefully* smash the potatoes until flattened, but still in one piece

8. Drizzle potatoes with olive oil, garlic and thyme

9. Place in oven and bake for about 20 minutes, or until golen brown and crisp

10. While they are baking, place whole avocado, mayonese and garlic cloves into food processer and blend until smooth and place aioli in a plastic bag (sandwhich bag)

11. Once potatoes are baked, pull out of oven and let sit for a moment

12. Cut a tiny slit in the bottom corner of plastic bag and begin to drizzle aioli on top of potatoes.

13. Serve immediately with lemon wedges (for taste)!
