Monday through Friday starts with a 4am wake up call....(sigh)
I get up, dressed and hustle out the door by 4:30am.
When I get to work, I'll usually start the morning with warm lemon water or drink 2 glasses of water before breakfast. I wait at least 3-4 hours to eat anything...just to let my system wake up and cells rehydrate!
Breakfast: since I'm running around the gym and members are in and out all morning the easiest meal is a nutrient dense shake.
Between 8am - 9am
TYPICAL morning smoothie:
1 Acai Packet (PURE acai) OR if I have Acai powder (2tbsp) OR I'll use a packet of Pitaya
Half banana
Blueberries
Spinach/kale
1 tbsp PB
Water with a splash of unsweetened almond milk
IF I plan ahead the night before, I'll cook some scramble eggs and top them with greens! Or make a breakfast wrap with eggs, kite hill cream cheese, spinach, red onion and tomato using TOFU wraps.
Mid-morning :
Cup of green tea
I get out of work by 12pm, so I will stay and workout until at least 12:45-1pm!
Lunch:
ALWAYS a green salad with more greens on top. Fortunately for me, my body craves plants.
Kale/Spinach/Arugula/Romaine
(whatever leafy greens we have)
Chopped: carrots, celery, cucumber, bell pepper, cherry tomatoes, (sometimes I'll add avocado)
Black beans
Dressing: 1-2 tbsp EVOO, a splash of ACV, black pepper, garlic and a dollop of garlic hummus (adds a creamy texture to salad)
For a crunch, I will heat up a tofu wrap on the stove and sprinkle a little olive oil, garlic and sea salt on top and then once golden, I'll break it up into pieces...homemade tortilla chips...YUM!
With lemon water.
Mid-Day Snack:
A piece of with some almonds or pb!
Cup of Green Tea.
(sometimes i'll sneak in a handful of Snyders GF pretzels...down fall)
Dinner:
Whatever my babe is feeling! Usually we have some type of plant with protein. If you see under my recipes section under the "dinner" tab, we try and stick to a plant based dinner. I love to make a huge pot of Pasta Fagioli on a Sunday so we can eat it throughout the week! We also love having breakfast for dinner! Another meal we have at least once a week is taco night...super easy, healthy and delicious.
Matt (my babe) is not vegetarian or vegan, he just likes to eat whatever I make him! Haven't heard him complain yet! If he wants to add chicken or sausage to any meal he has the option...I usually just stick to plant based proteins.
On another note...we usually have salmon a couple times a week. I love it for my skin. I swear that it is a beauty food staple to REBOOST skin and give it it's natural glow.
I will take salmon any way, baked, grilled, raw.
It is the one thing, I will not diminish from my diet.
We are way more relaxed on the weekends with meals! We loveeeee a good date night out or spending time with family.
Weekend comes and it's...
pizza, pasta, salad
tacos, chips, guacamole
sushi
lattes and avocado toast
